Breakfast Banana fritters

This morning after an 1.30hrs practice, I was hungrier than usual but didn’t know what I wanted to eat.

Often when this happens, I go into the kitchen for inspiration and end up making something that Ive not made before. Usually, Ill have to pop to the market or shops for at least one ingredient. Today however, I asked myself ‘’what if that were not an option? what would you eat then?’’ .Well thats pretty simple, Ill make do with what I have at home. 🙂

Banana fritters

Ingredients: 

1 cup whole Wheat sprouted flour
2 tsp baking powder
1.1/2 tsp Org mixed spice (Cinnamon, Coriander, Nutmeg, Ginger, Cloves, Fennel)
A sprinkle of Himalayan salt
2 ripe blended Bananas
1 cup Water

Method:

  1. Add all the ingredients to a bowl and whisk until you have a smooth batter consistency.
    Set this aside for 5 mins.

  2. Heat a non sticky frying pan over a medium heat & add coconut oil.

  3. Spacing them out evenly, Add 3 individual ladles of batter to the pan.
    When the top of the fritter begins to bubble, turn it over and cook until both sides are golden brown (given the nature of the mix, the fritter will rise to approximately 1cm thick. For extra thickness add 1.1/4 ladle for each fritter)

    I call these fritters but in consistency they are very similar to American style pancakes.

    If you are adding a topping as I did, you can transfer the fritters to the oven on a low heat until all desired ingredients are ready to serve.

    For the topping I added crushed Avocado, (layered with a smaller fritter) Apple sauce, Griddled Halloumi, a drizzle of Honey, cooked smoked Salmon, goats Cheese & a sprinkle of black pepper.
